Bisaltino Italian cow cheese made in Piedmont - Piemonte Region

Table cheese made with whole milk. A cylindrical shape with flat sides and an inedible rind. Color is ivory-white and the cheese is even and smooth with elastic dough. It is moderately large with small holes and is 'pleasantly perfumed' with a fruity, sweet milk fragrance.
