Blu Moncenisio Italian cow cheese made in Piemonte
Made with raw milk to the processing of pasture. The paste is straw-yellow and clearly visible blue veins. Dates from the natural fermentation of molds that create the streaks of blue-green. Blue cheese with a strong flavor - includes light notes of stable and labeled penicillin (noble rot) with a minimum maturation period of 90 days.
