Caciotta dei monti della Laga is an Italian cheese made from cow's milk and produced in Lazio

Product Description: This is a goat cheese mixed with sheep milk (up to 30%) soft and fatty, cylindrical in shape, medium in size (0.5-2 kg), with a pale yellow interior and a ripening that goes between 20 to 30 days. It has a sweet or slightly salty taste.
Elements of the 'traditional production process: the sheep's milk used comes exclusively from those that graze in the pastures of the Monti della Laga.
Materials used in the region: Copper boiler for coagulation; wooden boards for manipulating the shape and maturation stage. Use of special premises according to local tradition for processing and salting.
Traditional history of the product: Data compiled according to local, oral tradition, and data found in municipal archives, in addition to the historical presence of at least 25 years in stores in the area and in the local market.
