Product Description: This is a goat cheese mixed with sheep milk (up to 30%) soft and fatty, cylindrical in shape, medium in size (0.5-2 kg), with a pale yellow interior and a ripening that goes between 20 to 30 days. It has a sweet or slightly salty taste.

Elements of the 'traditional production process: the sheep's milk used comes exclusively from those that graze in the pastures of the Monti della Laga.
Materials used in the region: Copper boiler for coagulation; wooden boards for manipulating the shape and maturation stage. Use of special premises according to local tradition for processing and salting.
