This is a cheese made with whole milk and is semi-cured. It is a compact cheese, to be eaten alone or grated, tasty and spicy, with small and few holes. It has a white or straw-colored paste and its rind is rough. Its shape is cylindrical, with a diameter of 20-22 cm, 10-12 cm in height and a weight that ranges from 3 to 3.5 kg. It is ready to be eaten only after 90 days of ripening. To use it grated, this cheese needs 6 months of maturation.

Process technology: For the production of this cheese, whole milk from Canestrato is finished from two milkings of Veal Brown and dappled black cows and others, fed with grazing grass on permanent pastures or hay. The diet can be supplemented with simple or compound feeding allowed, but excluding the use of any preservative or additive.
The milk used comes from one or two milkings made on the same day. Then it is heated to 33-35 ° C.
