Boves is an Italian cheese made from cow's milk and produced in Piemonte - Piedmont Region
Characteristics: It has a height of 5 cm and a diameter of 13-15 cm. The rind, which is absent in the fresh product, is rather hard and yellowish in color in the cured product.
Weight: 7-12 kg. The dough is smooth and creamy, compact, with small holes that go from white to yellow, depending on the time of maturation.
Process technology: Raw whole cow's milk is used. In summer it is mixed with goat or sheep milk (50%). The milk is heated to 30 ° C.
