Brancaleone is an Italian cheese made from cow's milk and produced in Umbria
Brancaleone is the quintessential Umbrian cheese in the Marche region.
This cheese was matured in the old mill, found in the meadows around Norcia, called Marcite. Precisely in this place, which is very humid, the cheese is placed on top of the noble rot that allows it to keep the soft cheese inside. Brancaleone owes its name to the charm and fun of Brancaleone de Norcia, a medieval knight of humble origins, an almost-hero and careless clothes who assumed command of a brigade that wanted to conquer the Holy Sepulcher.
